The middle of January – cold, wet, windy….cold. The antidote? Liquid sunshine soup!
After a cold snowy walk this morning (if I don’t do it in the morning, it doesn’t get done)
But its freeeeeeeeeezing
So when we get home, the fires get lit and the soup goes on
This soup is an ant-inflammatory, cancer fighting, beta carotene bowl of goodness
(Good for you, looks pretty and very low maintenance – a bit like me….)
Chop up an onion, a clove of garlic, two sweet potatoes and three carrots
Put a knob of butter in a saucepan and add the veggies
Add 1/2 a teaspoon of turmeric for even more anti-inflammatory goodness, along with some salt & black pepper (helps your body absorb the turmeric)
Add six tablespoons of red lentils & cover with water/stock
Simmer for twenty minutes then blitz with a stick blender
Done!
I like to grate a 1/4 inch piece of ginger and squeeze in the juice, along with some chilli peppers to turn up the heat (its is January, after all!) To make it even more luxurious (and bone and gut healthy), I add a couple of spoonfuls of natural yoghurt.
Because life is too short not to eat well!
